Remove unsafe code

I’m just getting into embedded stuff so not sure if this is possible, but could the unsafe code blocks be removed?

We should be able to, the reason they're there right now is because of static mut variables. I'm actually working on a separate, Nano 33 IoT-based project right now, and I'll rework this code as part of that. I'll try to remember to share that when it's published.
