chore: expand ignore patterns and update documentation

- Restructure .gitignore with categorized sections for Python, virtual environments, OS/editor files, and build artifacts
- Add documentation files and additional file types to .dockerignore
- Rewrite Icons_SVG/README.md with clearer naming conventions and usage guidelines
- Update main README.md with improved project documentation
